Prepare: Cook the pasta according to the package instructions. Drain the pasta and reserve a 1/2 cup of the pasta water. Slice the onions and mushrooms.
Heat the oil in a skillet over medium heat. Once the oil is hot, add the onions and mushrooms. Reduce the heat to medium-low and cook for a few minutes.
Stir in the goat cheese; reduce to low heat. Stir until the cheese has melted and adjust the texture of the sauce with the pasta water.
