Prepare: Cook the pasta according to the package instructions. Drain the pasta and reserve a 1/2 cup of the pasta water.

STEP 1: Heat oil in a skillet over medium heat. Once the oil is hot add the onions and mushrooms. Reduce to medium-low and cook for a few minutes.

STEP 2: Reduce to low heat; add the goat cheese break it up with a spoon, and stir occasionally.

STEP 3: Once the goat cheese melts, adjust the consistency of the sauce with pasta water.

STEP 4: Stir in the drained cooked pasta, toss to coat in the sauce and heat through.

This is a great recipe for meal prep. Make the mushrooms and onions a day or two i advance and store in the refrigerator. When it’s time to serve, heat the mushroom and onion mixture over low heat while the pasta is cooking. Stir in the cheese and adjust with broth or water.

Ingredients

  • 8 ounces mushrooms cremini, white, shitake, portobello
  • 1 onion small
  • 1 tablespoon olive oil
  • 8 ounces pasta uncooked
  • 1 sprig fresh thyme
  • 1 1/2 teaspoons fresh oregano
  • 3 ounces goat cheese

Instructions

  • Prepare: Cook the pasta according to the package instructions. Drain the pasta and reserve a 1/2 cup of the pasta water. Slice the onions and mushrooms.
  • Heat the oil in a skillet over medium heat. Once the oil is hot, add the onions and mushrooms. Reduce the heat to medium-low and cook for a few minutes.
  • Stir in the goat cheese; reduce to low heat. Stir until the cheese has melted and adjust the texture of the sauce with the pasta water.
