Preheat the oven to 350 degrees f. Line a baking sheet with parchment paper.
whisk 1 egg in a medium sized mixing bowl.
Add 1/2 cup sugar and 1 cup natural peanut butter. Stir with a wooden spoon.
Use a cookie scoop or a teaspoon and drop the dough onto a parchment lined baking sheet. And bake for 10 to 12 minutes. Remove the cookies from the oven and top each cookie with a chocolate kiss while the cookies are still warm.

Store cookies at room temperature for up to a week in an airtight container in a single layer or in layers separated with parchment paper.For longer storage, place cookies on a baking sheet and freeze them for up to three months. Once they're solid, transfer them to a reusable bag for storage up to three months. When you're ready to eat, let them thaw at room temperature and enjoy.
