Roasted Broccoli with Lemon and Garlic

Ingredients

  • 1 Head Broccoli
  • 1 Lemon
  • 2 Cloves Garlic chopped
  • 1 1/2 Tablespoons Olive Oil
  • 1/4 Cup Parmesan Cheese Grated

Instructions

  • Preheat the oven to 400 degrees f.
  • Rinse, dry and trim 1 Head Broccoli; cut into bite sized pieces
  • Chop the garlic and squeeze the juice from one half of the lemon and cut the second half of the lemon into thin slices.
  • Toss the broccoli in 1 1/2 Tablespoons Olive Oil and arrange it on a parchment lined baking sheet with the lemon slices.
  • Drizzle the lemon juice over the broccoli; place into the oven and roast for 10 minutes.
  • Remove the broccoli from the oven add the garlic and roast 5 to 10 minutes longer until it reaches your preferred texture.

Notes

Serve as a side dish or over pasta, whole grains for a vegetarian meal. 
Substitute 1/8 teaspoon garlic for each clove of garlic
Store leftover roasted broccoli in the refrigerator in an airtight container for up to 5 days.
Reheat in the microwave or oven.
