Sheet Pan Shrimp and Veggies

Ingredients

  • 1 1/2 pounds shrimp
  • 1 cup artichoke hearts
  • 1/2 red onion sliced
  • 1/2 cup kalamata olives
  • 24 to 28 cherry tomatoes
  • 1 zucchini small to medium cut into cubes
  • 2 cloves garlic crushed
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1/4 to 1/2 cup feta cheese

Instructions

  • Preheat the oven to 400°F, line a baking sheet with parchment paper
  • Stir the olive oil, lemon juice, and garlic together small bowl or jar.
  • Toss half of the oil with the shrimp and the other half with the veggies until well coated.
  • Arrange the shrimp on half of a baking sheet lined with parchment paper and the veggies on the other half.
  • Bake 8 minutes, toss, then bake 8 to 10 minutes longer until the shrimp are pink and cooked through.
  • Add the feta cheese, toss and and serve.
