Ingredients

Overnight Oats Base

  • 1 cup old fashioned oats
  • 2 tablespoons chia seeds
  • 2 tablespoons almond butter
  • 1 1/2 cups plant-based milk
  • 1 teaspoons cinnamon

Baked Apples

  • 2 apples
  • 1 tablespoon maple syrup
  • 1 tablespoon melted coconut oil or butter
  • 1 teaspoon cinnamon

Instructions

  • Overnight Oats Base
  • Place the oats into two one cup mason jars - 1/2 cup each
  • Top each jar of  oats with 1 tablespoon almond butter, 1 tablespoon chia seeds and 1 cup water or your favorite milk.
  • Mix the ingredients together with a spoon, cover and store in the refrigerator.
  • Baked Apples
  • Cut the apples into 1/2 inch sized chunks and place them in an oven-proof baking dish
  • Melt the butter on top of the stove
  • Stir in the cinnamon and syrup
  • Pour the butter mixture over the apples and stir
  • Bake the apple mixture at 350 for 35 minutes
  • Store the baked apples in the refrigerator until it's time to serve the oatmeal
  • Top your overnight oats with a heaping spoonful of baked apples

Notes

Store overnight oats in the refrigerator for up to 5 days.
For a vegan version, use coconut oil instead of butter.
