Ingredients

  • 1 cup white flour
  • 3/4 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup cooking oil melted coconut oil, melted butter or olive oil
  • 1/2 cup coconut sugar
  • 2 eggs
  • 1 3/4 cup grated zucchini
  • 3/4 cup chopped walnuts

Instructions

  • Shred the zucchini with a box grater or food processor
  • Place the dry ingredients into the bread machine bowl, then add the wet ingredients and grated zucchini.
  • Select the quick sweet bread or cake cycle on your bread machine and press start.
  • Once the bread has completed the cooking cycle, carefully open the bread machine and remove the pan.
  • Allow the bread to cool for 10 minutes and carefully remove it from the loaf pan. Continue to cool the bread on a wire rack.

Notes

How to bake it in the oven:
    1.  
    1. Place ingredients into a mixing bowl and mix with a wooden spoon or electric mixer until all ingredients are combined.
    2. Pour the batter or dough into a small prepared loaf pan and bake in a preheated 350-degree oven for 50 minutes or until a toothpick inserted into the center comes out clean.
    3. Bake in a preheated 350-degree oven for 50 minutes or until a toothpick inserted into the center comes out clean.
 
Bread machine models are all different, check the bread machine manual or refer to the chart above for the proper setting to make zucchini bread (quick bread) in the bread machine.
Store zucchini bread wrapped in plastic or aluminum foil for up to three days.
Store it in the freezer wrapped tightly for up to three months.
