Raw cashews tossed with maple syrup, chia seeds, and uncooked quinoa, then baked until the coating turns into a crunchy shell. No egg whites, no oil, about 15 minutes in the oven.
Preheat the oven to 350°F and line a baking sheet with parchment paper.
Add all of the ingredients to a mixing bowl and stir until the cashews are fully coated with the syrup and seeds.
Spread the cashews in an even layer on the prepared baking sheet.
Bake for 7 minutes, then stir.
Bake about 7 minutes longer, until golden brown.
Let the cashews cool on the pan at room temperature for at least 20 minutes to crisp up before serving or storing.
Notes
Rinse and thoroughly dry the quinoa ahead of time if you can. Unrinsed quinoa can taste bitter. These are some of my go-to sweet bites for a board. If you want help pulling the rest of it together, my Charcuterie Builder breaks it down so you can mix and match meats, cheeses, and extras with what you already have.
