Ingredients

  • 1 medium zucchini
  • 3/4 cup homemade [guacamole]
  • chopped olives tomatoes or pickles and a side of fresh salsa

Instructions

  • Use a vegetable peeler to thinly slice 1 medium zucchini
  • Spread the guacamole onto the slices of zucchini
  • roll up the zucchini stips garnish with chopped olives
  • garnish with olives, tomatoes, or onions  

Notes

1 squash plus 3/4 cup of guacamole makes about 7 to 8 rolls. The calorie count is per roll.
Substitute hummus, goat cheese, or ricotta cheese with herbs or egg salad for the guacamole.
Use a mixture of yellow and green summer squash for a colorful presentation.
The number of rolls will vary depending on the size of the zucchini. 
You may have guacamole left over.
