I love one-pan dinners! They save so much time on cleanup and are perfect for a busy night. These cheeseburger lettuce wraps are similar to a burger bowl, quicker to make. You can mix them up with different burger fixings. Swap the ground beef for turkey or chicken if you like. Add toppings like avocado, guacamole, pickles or jalapenos to suit your taste.

Ingredients

  • Lean ground beef
  • Olive oil
  • Steak seasoning or a dash of garlic powder
  • Onion
  • Pickles
  • Tomatoes
  • Lettuce (romaine, bibb or iceberg lettuce)

Prepare: Rinse and thoroughly dry 4 to 6 lettuce leaves and set them aside. Chop the lettuce, tomateos, onions, and any other toppings.

STEP 1: Heat olive oil in a large pan over medium-high heat. Once the skillet is hot, reduce to medium, add the meat; sprinkle with steak seasoning. Continue to cook over medium heat until a little it of pink remains in the meat.

STEP 2: Blot the excess fat from the beef with a paper towel and assemble the wraps by placing a spoonful of beef onto each wrap, then top with cheese, let it sit for a couple of seconds so that the cheese melts, add the chopped dill pickle, diced onion and your favorite burger toppings.

After enjoying these tasty one-pan lettuce wraps, you might have some leftovers. Store room temperature lettuce wraps into an airtight container and refrigerate them for up to 3 days. If you anticipate leftovers, don’t assemble all of the wraps and store the lettuce separately from the beef to avoid soggy leftovers.

You can freeze the beef for up to 3 months, but it’s not recommended to freeze the other ingredients. Portion the beef out into meal-sized portions and freeze.

These are a meal as is, but they taste great with anything you would enjoy a burger with like a side of macaroni salad, steak fries, butternut squash fries, and a chopped salad.

Meat – change up the meat and replace the ground beef with ground turkey, chicken or pork.

Cheese – Try using different types of cheeses like Swiss, provolone, mozzarella or any of your favorite cheeses.

Vegetarian – Replace the meat with crumbled tofu, or a mix of sauteed mushrooms and quinoa.

Salad – Instead of individual lettuce wraps, make a salad with your favorite burger toppings with the cooked ground beef on top.

Toppings – Add any variety of toppings to your wraps from pickles, olives, jalapeno peppers, avocados, tomatoes, salsa, or whatever your favorite burger toppings are.

Tips

  • Look for lettuce that has large sturdy leaves such as romaine, bibb or iceberg.
  • Drain the excess fat to keep the lettuce from becoming soggy.
  • Meal prep tip – prepare the meat and toppings ahead of time for quick assembly later.
