I always have a stash of these chickpea burgers in my freezer. I whip up a big batch, have them for dinner, and freeze the extras. They are perfect for a quick meal, and easy to heat up.

Ingredients

  • Chickpeas (canned or cooked)
  • Onion (all purpose or red onion)
  • Fresh Garlic (or garlic powder)
  • Sun-Dried Tomatoes (dry packed or oil packed and drained)
  • Fresh Basil (or dried)
  • Cashews
  • Fresh Lemon Juice
  • Feta Cheese
  • Cumin

STEP 1: Place all of the ingredients into a food processor bowl.

STEP 2: Blend until smooth. The texture will be similar to pie dough.

STEP 3: Form the mixture into 6 to 8 patties that are about 1/2 inch thick.

STEP 4: Heat olive oil in a large heavy skillet over medium-high heat. Once the oil is hot, add the burgers and cook them until they are golden brown – about 4 minutes on each side.

There are so many ways to enjoy Mediterranean chickpea burgers. We like them garnished with lemon zest and a sprinkle of sea salt and black pepper with a salad, or over a bed of field greens topped with roasted red bell peppers, and cucumbers. They also taste great tucked into a roll or pita with fresh spinach on top and a slice of tomato with a side of cucumbers in vinegar , Mediterranean tomato cucumber salad or butternut squash fries.

These burgers are meant for leftovers! In addition to the refrigerator, they freeze and reheat easily. Once they have reached room temperature, place them into an airtight container where they should last about 3 to 4 days.

To freeze your chickpea burgers, arrange cooked, room-temperature chickpea burgers in a single layer on a baking sheet lined with parchment paper and place them into the freezer. Once they are frozen, transfer the patties to a freezer-safe bag or an airtight container where they will last for up to 3 months. Chickpea burgers can also be frozen before they are cooked using the same instructions for freezing above.

The leftover burgers can be reheated in top of the stove from frozen, in the oven or microwave.

Spinach & Olive – Add fresh spinach, and chopped kalamata olives, oregano and thyme.

Spicy – Add a dash or two of red pepper flakes or hot pepper sauce for a spicy kick.

Italian Herb – Add chopped basil and roasted peppers. Replace feta cheese with parmesan cheese.

Curry – Add a dash of curry powder and chopped cilantro.

Smoky Chipotle – Add a chipotle pepper in adobo and some smoked paprika, and replace the feta cheese with pepper jack cheese.

Beans – Change up the beans and replace the chickpeas with black beans, white beans, kidney beans or lentils.

Vegan – For a vegan version, leave out the feta cheese or replace it with your favorite vegan cheese.

Tips for making the best chickpea burgers

  • For burgers that don’t fall apart, make sure the ingredients are thoroughly combined and when forming them firmly press them together.
  • If the mixture in the food processor seems crumbly add a little bit of water.

Ingredients

  • 1 can chickpeas 15 ounces, drained and rinsed
  • 1/2 medium onion roughly chopped
  • 4 cloves garlic roughly chopped
  • 1/2 cup sun-dried tomatoes dry packed
  • 1/2 cup fresh basil roughly chopped
  • 1/2 cup cashews
  • 1 tablespoon lemon juice
  • 1/2 cup feta cheese crumbles
  • 1 teaspoon ground cumin

Instructions

  • Prepare the ingredients: roughly chop the garlic and onions.
  • Place all of the ingredients into a bowl of a food processor. Blend until the mixture is smooth and has a texture similar to pie dough.
  • Use your hands to form the mixture into patties that are about 1/2 inch thick.
  • Heat olive oil in a skillet. Once the oil is hot, add the burgers and cook them for about 4 minutes on each side.

Notes

Store leftover burgers in the refrigerator for up to 4 days. Freeze them in a single layer. Once frozen pop them into a storage container for up to 3 months.
Reheat leftovers on top of the stove.

Can I use fresh tomatoes instead of sundried ones?

Sundried tomatoes add a more intense flavor and contain less moisture. So it is not recommended to use fresh tomatoes in this recipe.

Can I bake chickpea burgers instead of pan-frying them?

You can bake chickpea burgers in a preheated 375 degree oven for about 15 minutes, flipping half way through.
