If you have leftovers, let them cool to room temperature, place them in an airtight container and refrigerate for three to four days. Reheat leftovers in an air fryer or oven at 350 degrees until they are heated through, about 10 minutes, or in the microwave on high for a minute or two.

Tips

  • If you use large mushrooms, use one cap per person or two per person for smaller portobello mushrooms.
  • If you don’t like lot of sauce, use a thin layer of sauce.
  • Let the mushroom caps rest of for a few minutes before serving them, they will be very hot!
  • Cook time will vary depending on the size of the mushroom, check halfway through cooking time to make sure they aren’t overcooking.

Can I make these ahead of time?

Yes, you can prep the ingredients (clean the mushrooms, shred or slice the cheese) and store in separate containers in the refrigerator for a day or two. You can also assemble the mushroom pizzas and store them in the refrigerator for up to a day. Remove the mushrooms from the refrigerator 15 minutes before air frying.

Do I need to remove the gills from portobello mushrooms?

It’s not necessary to remove them. Some people prefer to do so for aesthetic reasons or to prevent the gills from turning a dish dark and muddy. Since they are covered with pizza sauce, the gills should not affect the appearance of the pizza. If you prefer to remove them, use a spoon to gently scrape them out.
