How to make buffalo chicken potato chip nachos

Potato chip nachos are almost as easy as making regular nachos. To get started with this recipe, you will need air-fried potato chips (recipe in the link) or thick kettle chips. Once the chips are made, follow the instructions below.

STEP 1: Preheat the oven to 375 degrees f. Place the shredded chicken into a small mixing bowl. Combine the hot sauce and olive oil together; combine it with the chicken

STEP 2: Arrange the potato slices in a single layer on a parchment-lined baking sheet.

STEP 3: Add a layer of chicken on top of the potato slices.

STEP 4: Sprinkle on the cheese and bake the nachos as 350 degrees for 10 to 15 minutes until they are heated through.

Ingredient notes and substitutions

Air Fried Potato Chips – Crispy potatoes are the perfect vehicle for nachos. If you don’t want to take the time to make your own potato chips, you can use packaged unsalted potato chips for a shortcut (we like thick sliced kettle chips), or you can replace the potatoes with tortilla chips for more traditional nachos.

Olive Oil – Adds a velvety texture to the hot sauce and can easily be substituted with the same amount of melted butter.

Hot Sauce – The best hot sauce, in my opinion, for buffalo flavor is Frank’s, but you can use any buffalo sauce that you like to make these potato nachos.

Cheese – Cheddar cheese and blue cheese taste great on these nachos. You can also use pepper jack, Monterey jack, mozzarella, Colby jack, or your favorite cheese sauce.

Make ahead instructions

This is a great recipe to make ahead of time. You can put the entire recipe together and store it in the refrigerator for a day or two and heat it up just before serving.

You can also make the chips and chicken ahead of time and store them in separate containers. The chips at room temperature and the chicken in the refrigerator, assemble the nachos just before serving.

Storing and reheating leftovers

Leftover buffalo chicken potato nachos can be stored in an airtight container in the refrigerator for up to three days.

To reheat them, place them on a baking sheet or cast-iron skillet and into a preheated oven at 350.

Bacon Buffalo Potato Nachos – Sprinkle one to two strips of crumbled crispy bacon bits onto the nachos when they come out of the oven.
