  • Fresh Cucumbers – Any variety; Kirby, English, Persian or regular slicing cucumbers are good choices.
  • Cherry Tomatoes or Grape Tomatoes
  • Olives – Any variety or a combination
  • Everything but the Bagel Seasoning
  • Fresh herbs for garnish (optional)

How to make cucumber hummus bites

Prepare the ingredients: Rinse and dry the cucumbers and cherry tomatoes. Cut the olives and cherry tomatoes in half and set them aside.

STEP 1: Use a sharp knife and slice the cucumbers horizontally into 1/4 to 1/2 inch thick slices.

STEP 2: Arrange the cucumber slices on a serving tray or platter, and use a small spoon to drop the hummus onto each slice of cucumber.

STEP 3: Sprinkle the cucumber slices with everything but the bagel seasoning. Then place a slice of tomato or olive in the center of each cucumber.

STEP 4: Place a slice of tomato or love in the center of each cucumber slice. Serve immediately or store them in the refrigerator for up to 4 hours before serving.

Hummus is a creamy dip made from chickpeas, tahini (sesame seed paste), olive oil, garlic, cumin, and lemon juice. It’s a staple in Mediterranean cuisine. It’s a tasty and satisfying spread for veggies, pita bread, and these cucumber bites.

Hummus comes in a variety of flavors beyond classic hummus, including sun-dried tomato, roasted pepper, beet, and even dessert varieties. For these bites, I suggest using any savory hummus flavor. I usually make them with homemade hummus, but store-bought works well too and saves time.

Recipe variations

Cucumbers are a blank slate for a variety of toppings. Here are some suggestions.

Yogurt – Instead of hummus, use thick and creamy Greek yogurt or tzatziki sauce with a sprinkle of fresh parsley and sesame seeds or chopped red onion and dill weed.

Guacamole– Top hummus with guacamole and diced jalapenos and olives on top.

Spicy – Add a dash of cayenne pepper or red pepper flakes to the hummus for a kick of heat.

Cream cheese or cottage cheese: Swap the hummus for either one, then top with a sprinkle of garlic powder, chopped tomatoes, and fresh basil for a creamy, herby twist

Greek – Mix a quarter cup of feta crumbles into the hummus before adding it to the top of the cucumber slices.

Change up the base– Instead of cucumber slices, try using any combination of zucchini slices, radish slices, endive leaves, or mini bell peppers.

Change up the toppings – Replace the toppings listed above with your favorite spice blend such as za’atar, sesame seeds, cajun blend, chili powder or just salt and pepper, a drizzle of olive oil, roasted red peppers, red bell peppers, goat cheese or feta cheese crumbles.

Ingredients

  • 1 cucumber
  • 1/2 cup hummus
  • Everything But the Bagel Seasoning to taste
  • 4 to 5 cherry tomatoes
  • 2 to 4 kalamata olives sliced

Instructions

  • Rinse and dry the cucumbers and tomatoes. Cut the olives and tomatoes in half.
  • Use a sharp knife to slice the cucumber into slices that are about 1/4 inch thick.
  • Arrange the cucumber slices on top of a serving tray and use a teaspoon to spoon on enough hummus to almost cover the cucumber.
  • Sprinkle each slice with the seasoning and top them with slices each one with a slice of olive or tomato.
