  • Watermelon
  • Blueberries
  • Feta cheese crumbles (goat cheese or gorgonzola works too)
  • Fresh mint
  • Lemon juice

Prepare the Ingredients: Cut the watermelon into 1-inch cubes, ensuring any seeds are removed – even seedless watermelon sometimes contain a few seeds. Rinse and drain the blueberries. Chop the fresh mint and crumble the feta cheese.

STEP 1: In a large bowl, gently mix the watermelon, blueberries, mint and feta cheese.

STEP 2: Drizzle the freshly squeezed lemon juice over the salad and toss gently to combine. Serve immediately, or refrigerate for up to 2 hours before serving.

Some tips for making the best watermelon blueberry salad

  • Save time and look for pre-cut watermelon in the produce section.
  • If you’re preparing this salad in advance, wait to add the feta just before serving to keep the flavors fresh and the texture crisp.
  • Citric acid in lemon juice helps to keep the fruit from browning. If you are preparing ahead of time, don’t skimp on the lemon juice.

Can I use dried herbs instead of fresh?

Fresh herbs are the best in this refreshing salad. Dried herbs will not offer the same amount of freshness.

Can I use bottled lemon juice?

Fresh lemon juice is the best choice, but bottled will work in a pinch. Approximately two tablespoons of bottled lemon juice equals the juice of one lemon. Keep in mind the flavor will be different.

Can I add sugar to this salad?

Fruit is naturally sweet and doesn’t need to be added to this salad. However, if you prefer a sweeter taste, you can add a little bit of sugar to taste.

Can I use frozen fruit in this salad?

I don’t recommend using frozen fruit for this salad. Frozen fruit tends to release excess moisture upon thawing, which will make a mushy fruit salad.

How far in advance can I make this salad?

You can prepare this salad up to 2 hours in advance. If you are making it ahead, use half the lemon juice and add the remainder just before serving with the crumbled cheese.

Ingredients

  • 1 Pint fresh blueberries
  • 3 cups chopped watermelon about one half of a small watermelon
  • 1 tablespoon chopped fresh mint
  • 1 1/2 tablespoons freshly squeezed lemon juice
  • 1/4 cup feta cheese crumbles

Instructions

  • chop the watermelon and place it into a bowl along with the blueberries, chopped mint and cheese crumbles.
  • add the lemon juice and serve.

Notes

This recipe serves about four, but it can easily be doubled or tripled for larger gatherings using the recipe scale button in the recipe card.
