Boneless pork roast. The best meat to use to make slow-cooked tender pork is a boneless center rib roast, pork loin, or rib end. These cuts of meat contain enough fat for flavor but are still fairly lean.
You can also use pork shoulder or pork butt if you prefer a cut of pork with more fat content.
Tamari sauce is a Japanese fermented sauce made with soybeans and tastes very similar to soy sauce. It is usually wheat-free and has a more robust flavor.
Substitute tamari sauce with an equal amount of soy sauce or coconut aminos.
Maple syrup is a natural sweetener that is used to sweeten the sauce in this recipe.
Substitute maple syrup with an equal amount of honey, brown rice syrup, or agave nectar.
Fresh ginger can be substituted with 1/4 teaspoon of ground ginger.
