I don’t recommend freezing leftover stroganoff as the sour cream may separate.

  • 1 pound lean ground beef
  • 12 ounces mushrooms
  • 1 onion small to medium
  • 1/2 cup red wine
  • 1/2 cup sour cream

Instructions

  • Prepare the ingredients: wipe 12 ounces mushrooms with a damp cloth and slice them thin. Chop 1 onion. Heat a skillet over med-high heat.
  • Once the skillet is hot, add the ground beef and cook for a few minutes until it is almost cooked through.
  • Reduce the heat to medium heat, add the sliced onion, and mushrooms; cook for about 3 minutes until they begin to wilt.
  • Add 1/2 cup red wine, reduce heat to low; cover the skillet and simmer for 10 minutes.
  • Remove the cover and stir in the sour cream with a spoon or whisk. Turn the heat off and serve over egg noodles.

Tips:
  • Once you add the sour cream, simmer just until it’s heated through, and remove it from the heat.
  • If you prefer a thicker stroganoff sauce, stir in a little bit of all purpose flour.
