- Ground beef keeps this stroganoff economical and quick to prepare, while fresh ingredients give it rich flavor without canned soup.

Ingredient Notes
- Ground beef: Lean sirloin works best for flavor without too much fat, but chuck will also work.
- Mushrooms: Use cremini, white button, or sliced portobello mushrooms.
- Sour cream: Adds creaminess; you can swap in plain Greek yogurt if you prefer.

Make it Your Way
- Switch the protein: Use ground chicken instead of beef for a lighter version.
- Change the mushrooms: Try cremini, shiitake, or oyster mushrooms for deeper flavor.
- Skip the wine: Use beef broth instead for a more traditional savory flavor.
- Add more flavor: Add fresh thyme and a bay leaf while it simmers, then finish with parsley or a splash of Worcestershire sauce before serving.
- Make it meatless: Replace the beef with extra mushrooms or tofu for a vegetarian version.
How to Store Leftovers
Leftover creamy beef stroganoff can be stored in the refrigerator in an airtight container for up to 4 days. Reheat leftovers over low heat on top of the stove or in the microwave.
I don’t recommend freezing leftover stroganoff as the sour cream may separate.

Serving suggestions
Serve 5-ingredient beef stroganoff with egg noodles, and a simple vegetable side dish like peas and carrots, green beans, roasted Brussels sprouts or sauteed cauliflower.
