Beef stroganoff is the ultimate comfort food that tastes like it was cooking all day long. With just five ingredients, this twist on traditional beef stroganoff keeps things uncomplicated with the same great flavor.

It’s made with ground beef rather than thin strips of beef, which provide a strong base. The onions and mushrooms add a flavorful depth, and the sour cream and wine enhance the flavors of the creamy mushroom sauce, making it a healthier replacement for the cream of mushroom soup that is often used to make homemade stroganoff.

Ingredient Notes and Substitutions

This is an overview of the ingredients and steps to make this easy ground beef stroganoff recipe; scroll down for a printable recipe card with exact measurements and detailed instructions.

Ground beef– for a more traditional stroganoff, you can substitute the ground beef with a good quality steak sliced into thin strips.

Sour cream – Plain Greek yogurt can be substituted with sour cream in this recipe.

Mushrooms – I like to use white button mushrooms or cremini mushrooms in stroganoff for the best results. However, feel free to use any mushroom as they will all work. White button and cremini mushrooms have a slightly meaty texture that adds to the overall taste and texture of the dish.

Wine – For an alcohol-free version, wine can be replaced with beef broth or water.

How to store leftover beef stroganoff

Leftover creamy beef stroganoff can be stored in the refrigerator in an airtight container for up to 4 days. Reheat leftover 5-ingredient beef stroganoff over low heat on top of the stove or in the microwave.

I do not recommend freezing leftover stroganoff as the sour cream may curdle.

Recipe variations

Chicken stroganoff – Replace ground beef with ground chicken or sliced boneless chicken breasts.

Mushroom Medley- Use a variety of mushrooms to elevate the earthy flavors try combining cremini, shitake, and oyster mushrooms.

Sour Cream – Adds a creamy texture and can easily be replaced with plain Greek yogurt.

Change up the wine – and use white wine instead of red.

Serving suggestions

Serve 5-ingredient beef stroganoff with egg noodles, green peas and carrots, green beans, roasted Brussels sprouts or sauteed cauliflower.

💡Tips

  • Once you add the sour cream, simmer just until it’s heated through, and remove it from the heat.
  • Deglaze the pan – When adding the wine, scrape up the browned bits from the bottom of the pan for extra flavor.
  • If the beef sticks to the pan, add some water or olive oil.
  • If you prefer a thicker stroganoff sauce stir in a little bit of all purpose flour.
Can I add more spices to this recipe for extra flavor?

Yes! This recipe’s beauty is simple, but if you want to add more flavor, you can add fresh thyme and a bay leaf during the simmering process. A dash of worcestershire or tamari sauce just before serving elevates the flavor.

Can I make beef stroganoff without onions?

You can omit onions from this recipe; however, they add a lot of flavor. They can be substituted with shallots or leeks. If you have an onion allergy, you can try replacing onion with cooked fennel or celery.

Can you use white wine instead of red wine to make beef stroganoff?

Yes, you can use any wine if it’s not sweet. Remember that red wine has a rich flavor, while white wine has a milder flavor.

Do you need to add oil to the skillet before browning the ground beef?

Unless it is super lean, adding oil to the skillet is unnecessary to brown the beef. If the beef starts sticking to the skillet, add a little oil or water while it is cooking.

Can I make this easy beef stroganoff recipe in a slow cooker?

Yes, this recipe can easily be converted to slow cooker beef stroganoff. Follow the recipe steps up to adding the wine. Transfer the ingredients to a slow cooker and add the wine; cook for at least an hour. Add the sour cream, stir the slow cooker steroganoff until it is through, and serve.
