How to Make Potato Chips In an Air Fryer

If you have difficulty saying no to potato chips, you will love these homemade chips. They are so crispy and delicious even though they are made with very little oil. Every time I make these easy air fryer potato chips, the bowl empties fast. They taste great plain or with dip; we like to dip them in caramelized onion dip or sriracha dipping sauce.

Air fryers are so convenient! They allow you to enjoy the flavor of fried food with minimal mess and less oil. Moreover, they are versatile appliances that can be used for baking potatoes, cooking vegetables, and much more.

How to make homemade potato chips in the air fryer

Prepare: clean and dry the potatoes. Slice them into thin slices, about 1/8 inch thick and evenly cut using a sharp knife, mandoline slicer or a food processor slicing blade.

STEP 1: Place the potato slices into a large bowl of cold water and let them soak for about 30 minutes which will help to draw some of the starch out of the potatoes. Drain the potato slices and dry them well to remove the excess moisture with paper towels. Preheat the air fryer to 400 degrees f.

STEP 2: Arrange the slices of potato in the air fryer basket or tray in a single layer and sprinkle with sea salt or garlic salt.

STEP 3: Place the air fryer tray or basket into a preheated air fryer and cook the chips until they begin to turn golden, which will take about 15 minutes. However, cooking time can vary depending on your air fryer. Some potato slices may brown faster than others, so remove them from the air fryer as soon as they are golden and crispy, allowing the remaining ones to continue cooking.

Ingredient notes and substitutions

Potatoes – The best potatoes for making air-fried potatoes are Yukon gold potatoes or russet potatoes. I don’t recommend red potatoes because they contain more starch and are more waxy in texture. They won’t get as crisp in the air fryer.

Oil – Olive oil is my preferred oil when I make air-fried potato chips, it can be replaced with an equal amount of avocado oil or you can use cooking spray made from olive oil or avocado oil.

Sea salt – This is optional, and can be left out or you can season with your favorite seasoning blend. See the suggestions in the recipe variations section.

How to make air fryer chips in the oven

If you don’t have an air fryer, you can still make these crispy chips in the oven. Here’s how:

  • Preheat the oven to 400 degrees f.
  • Place a baking rack (cookie cooling rack) on top of a baking sheet. If you don’t have a baking rack, place the potato slices onto a parchment-lined baking sheet and turn them over halfway through the cooking cycle.
  • Arrange the potato slices on the baking rack and bake them in a preheated oven for 15 minutes.
  • Remove the chips as they start to turn brown, it could take up to 20 minutes or a little more for all of the chips to be ready.

For best results, store your crispy potato chips in an airtight container or plastic bag at room temperature for two to three days. If they lose their crispy texture, place them in the oven or air fryer for a few minutes to crisp them up.

What to serve with homemade potato chips

These crispy crunchy potato chips taste great all by themselves, with homemade caramelized onion dip, blue cheese dip, or as a side with a delicious hummus wrap. You can also make potato nachos with these tasty crispy chips topped with a spoonful of sour cream or Greek yogurt.

Tips

  • Slice the potatoes as thin as possible and similar in size to ensure even cooking.
  • Some chips will turn brown faster than others, remove them from the air-fryer as they start to turn golden.
Do I need to peel the potato slices before making the chips?

Most of the nutrients in potatoes are in the potato skins, so it’s best to leave them on. Leaving the skin on also reduces the amount of prep time, so it’s a win-win. If you don’t like potato skins on your potatoes, you can use a vegetable peeler to remove the skin before slicing the potatoes.

Can I skip the potato-soaking step if I’m in a hurry?

You can skip the potato soaking step, but it could affect the crispiness of the chips.

  • Clean the potatoes and slice them thin with a food processor, mandoline slicer or a very sharp knife.
  • Place the potato slices into a bowl and cover them with cold water; allow them to soak for 30 minutes. This will help to remove some of the starch from the potatoes.
  • Drain the potatoes and dry them well with a kitchen towel or paper towel and place them in an  empty dry bowl.
  • Add the oil and mix well so that all of the slices are covered in oil
  • Arrange the potato slices in the basket or tray of your air fryer.
  • Bake at 400 for 15 minutes, removing the chips as they start to turn golden. Some will cook faster than others.

OVEN METHOD

  • Preheat the oven to 400
  • Place a baking rack on top of a cookie sheet or line a baking pan sheet with parchment paper.
  • Arrange the oil covered potato slices on the rack and bake them for 15 minutes
  • Remove the chips as they turn golden, it could take up to 20 minutes for all of the chips to be ready
  • If you are not using a baking rack, flip the potatoes over halfway through the cooking process.

Ingredient Notes:
Potatoes. The best potatoes for making air-fried potatoes is Yukon gold potatoes or russet potatoes. Red potatoes contain a higher amount of starch and won’t get as crisp.
Substitute russet potatoes or Yukon gold potatoes with sweet potatoes for sweet potato chips. Sweet potatoes cook faster, so you may have to adjust the cook time a bit.
